Spicy Ramen Noodle Salad is perfect on a hot Summers day. A refreshing, spicy and healthy cold noodle dish, suitable as a side or a main and a breeze to put together.

Ingredients
- 1 tbs light soy sauce
- 1/2 lime juice of
- 2 tsp caster sugar
- 1 tsp chilli flakes
For The Salad
- 90 g ramen noodles
- 1 carrot julienned
- 1 cm fresh ginger peeled and very finely sliced
- 1 tbs black sesame seeds toasted
- 1/2 cup fresh coriander leaves

Instructions
For The Dressing
- Place all of the dressing ingredients in a small jar, shake well and set aside.
For The Salad
- Cook the noodles in boiling water for four minutes. Drain and rinse under cold water.
- In a medium sized bowl, toss the noodles with the carrot, ginger, coriander and most of the sesame seeds (reserve a few seeds to sprinkle on top as a garnish).
- Pour over the dressing, toss to combine and serve.
Recipe Notes
The easiest way to toast black sesame seeds is to place them in a small pan with a few white sesame seeds over a low heat. Shake the pan regularly. When the white seeds are lightly golden, the black seeds will also be toasted.
