- Bring the water to the boil in a small pot.
- Turn the heat down and gradually add the sugar stirring until dissolved.
- When the sugar has dissolved add the quartered habanero chilies and simmer gently for 20 minutes.
- After 20 minutes, strain the syrup into jar and refrigerate when cool.
