Making a berry coulis is a cinch. It will take you all of 10 minutes from start to finish. On this occasion, I have used raspberries, but you could experiment with berries of your choice. My Raspberry Coulis is pure indulgence to drizzle over your favorite ice cream, cheesecake or add even more decadence to a rich chocolate dessert.

- 2x 125g punnets raspberries
- 5 1/2 tbs caster sugar
- 1/4 cup water

Instructions
- Place the berries, sugar and water in a small pan and gently heat until the sugar has dissolved and raspberries have softened without allowing the mixture to boil.
- Remove from the heat, allow to cool a little then zap in a food processor or with a stick blender for a few seconds until smooth.
- Push the mixture through a sieve and discard the seeds. Refrigerate until required
