Chilli Beef With Chipotle

Without a doubt, this dish will warm you up. It begins as a relitavely basic beef casserole with the addition of some red kidney beans, spices and the bonus of a smokey , rich flavour coming from the Chipotle in Adobos sauce. If you choose to use  the dark chocolate , you will love the  smooth, velvety texture it creates and it will be a great talking point at your dinner table. ðŸŒ¶ðŸŒ¶

Instructions
  1. Pre heat the oven to 180°.
  2. In a large non stick pan , heat 1tsb of the oil to medium. Brown the meat in batches on all sides and set aside.
  3. Add the remaining oil to the pan and gently saute the onion for 10 minutes.
  4. Add the garlic and capsicum and continue to cook for a further 5 minutes.
  5. Return the meat to the pan.
  6. Sprinkle over the flour, chilli , oregano and coriander and stir fry for two minutes or until the flour has been absorbed.
  7. Add the tomato, stock, water, salt and cracked pepper and the chipotle in adobo sauce. Bring to the boil then carefully transfer to a casserole dish.
  8. Bake in the oven, with the lid on for two and a half hours. I recommend checking every hour and adding a little water if the sauce becomes too thick.
  9. Add the drained kidney beans and chocolate and continue to bake for a further 30 minutes.
  10. Remove from the oven and serve sprinkled with fresh coriander, a side of steamed rice and plenty of sour cream.
Recipe Notes

Chipotle in adobo sauce is made from smoked jalapeno chillies with tomato, vinegar and plenty of spices added. It is quite hot and a couple of tablespoons is all you need to add body and heat to your dish. It is available at most supermarkets.
