Saganaki

Saganaki is a is a fuss free, fail safe appetizer you can have on the table in just a couple of minutes. You can use a variety of hard Greek cheeses such as Kefalograviera, Graviera, Halloumi or even a pre packaged product found in Supermarkets marketed as Saganaki . A  gooey, salty slab of cheese fried golden brown and served with a little lemon or some of pennysmenu cherry mostardo or even a fresh salad as a light meal.

Instructions
  1. Cut the cheese into 1cm slices. Warning ,if you cut the slices thinner than 1cm, the cheese will melt into the pan.
  2. Heat a heavy based or non stick frying pan to a medium high heat and add the oil.
  3. When the pan is heated, run each piece of cheese under the cold water tap and then dust in the plain flour. Shake off any excess flour .
  4. Place the cheese pieces into the heated pan and fry for a couple of minutes until golden brown on each side turning only once.
  5. Serve immediately.
