This Satay is easy and full of flavour. You can serve it as a starter with a couple of chicken or beef skewers or as a main with a tasty salad such as pennysmenu mixed leaf and asparagus salad and a serve of jasmine rice

Ingredients
For The Satay Sauce 🥜
- 1/2 cup crunchy peanut butter
- 1 very small brown onion finely diced
- 1 garlic cloves finely diced
- 1 cm piece fresh ginger grated
- 2 tsp ground coriander powder
- 1 tsp ground cumin powder
- 1 tsp chilli powder
- 2 tsp paprika
- 3 tsp sugar
- 1 dsp tamarind pulp (optional)
- 2 cups water
- 3 dsp canola or vegetable oil
- 1/2 tsp salt

- 1 small chicken breast fillet per person
- 1-2 tbs olive oil
- 1 garlic clove finely diced

Instructions
For The Satay Sauce 🥜
- Heat the oil and sauté onion on a gentle heat for 5 minutes or until translucent (not browned). Add the garlic and ginger and continue cooking for a couple of minutes. Add the ground spices and sauté a minute or two longer to release their aroma. Add remaining ingredients and bring to a gentle simmer. The tamarind will add a tangy citrus taste and is optional as I have made this satay sauce successfully many times without.
- With the lid on, simmer for half an hour by which time a red oily film will develop on the surface. Pour into a jug or bowl and serve with grilled chicken, pork or beef bbq skewers
For The Chicken Skewers 🍗
- Slice chicken breast fillets into bite size pieces and mix with the olive oil and the finely diced garlic clove. Cover and refrigerate for an hour . Thread 4 or 5 chicken pieces onto each skewer. Bbq on a hot plate for 5 minutes each side .
Recipe Notes
To prevent the wooden skewers from burning on the BBQ, soak them in cold water for half an hour beforehand.
