White Bean Skordalia

White Bean Skordalia
This white bean dip is my version of YiaYia’s original recipe. It still has the  traditional flavor with the overpowering garlic toned down and is a nice change from the run of the mill commercial dips. It’s simple, and its tasty and  along with my guacamole, is a hit with family and friends.

Instructions
  1. Firstly mince the garlic cloves by peeling and roughly chopping them on a board. Sprinkle them with a little salt and rake through with a fork until  pureed. Place all of the ingredients into a food processor and beat until very smooth. Refrigerate until needed (can be made well in advance of serving) and serve with crusty bread.
