This white bean dip is my version of YiaYia’s original recipe. It still has the traditional flavor with the overpowering garlic toned down and is a nice change from the run of the mill commercial dips. It’s simple, and its tasty and along with my guacamole, is a hit with family and friends.

Ingredients
- 400 g can of cannellini beans drained
- 1 to 2 small garlic cloves minced
- 1 lemon juice of
- 3 tbs olive oil
- pinch salt
- pinch white pepper

Instructions
- Firstly mince the garlic cloves by peeling and roughly chopping them on a board. Sprinkle them with a little salt and rake through with a fork until pureed. Place all of the ingredients into a food processor and beat until very smooth. Refrigerate until needed (can be made well in advance of serving) and serve with crusty bread.
