There’s nothing boring about Spicy Carrot Ribbon Salad. Out with the “Ho Hum” and in with the zing of the dressing, the freshness of the coriander and just the right amount of spice to make this salad a real surprise packet.

Dressing Ingredients
- 1 small garlic clove minced
- 1 tbs white vinegar
- 1 tbs rice wine vinegar
- 1 tsp caster sugar or honey
- 1 tsp sesame oil
- 1 tsp roasted sesame seeds black or white or a mixture of both
- 1 tsp chilli flakes or to taste
Salad Ingredients
- 3 medium carrots
- 1 handful fresh coriander leaves
- 1 tsp fresh ginger peeled & very finely sliced

Instructions
- Place all of the dressing ingredients in a small screw top jar and shake well
- Peel the carrots.
- Create the ribbons with a standard vegetable peeler. Starting at the fat end, slice down the entire length of the carrot. Continue to peel as much of the carrots as possible.
- Place the carrot ribbons, ginger slithers (if using) and coriander leaves into a medium sized mixing bowl. Pour over he dressing and toss well. Sprinkle with a few extra sesame seeds for garnish and serve.
