Itโs definitely not hard to eat healthy when Roasted Cauliflower is on the menu. It has a nutty, moreish flavour and for calorie counters, itโs pretty much guilt free.

- 1 small cauliflower
- 1-2 tbs olive oil
- A pinch good quality salt

Instructions
- Break the cauliflower into florets and cut the larger florets into thick slices.
- Place the cauliflower into a mixing bowl, drizzle with the olive oil, sprinkle with the salt (optional) and gently toss.
- Spread onto a baking tray. Bake at 180ยฐ (a little less for fan forced) for around 20 to 30 minutes until golden brown and cooked through when tested with a skewer.
- Hint. To achieve an even colouring, turn the cauliflower pieces over halfway through the cooking
