Break the cauliflower into florets and cut the larger florets into thick slices.
Place the cauliflower into a mixing bowl, drizzle with the olive oil, sprinkle with the salt (optional) and gently toss.
Spread onto a baking tray. Bake at 180° (a little less for fan forced) for around 20 to 30 minutes until golden brown and cooked through when tested with a skewer.
Hint. To achieve an even colouring, turn the cauliflower pieces over halfway through the cooking
