Ingredients
- 500 g lean beef mince
- 1/2 cup raw rice medium grain
- 1 brown onion finely diced
- 1 garlic clove finely diced
- 1 egg
- 1 level tsp chilli powder
- 1 litre tomato juice
- salt & pepper
- 2 tbs olive oil
- 1/4 cup plain flour for dusting
- 1 deep sided frying pan with a tight fitting lid

Instructions
- ** For this recipe, you will need a deep sided pan with a tight fitting lid as the meat balls are large and high. Mine is 25cm wide and 5cm deep.
- In a medium sized mixing bowl, combine the mince, onion, garlic, rice, beaten egg , salt and pepper (mixing well with your hands). Shape into 4 large, SMOOTHÂ balls (the balls will keep their shape if they are smooth , without any cracks ). Roll each ball in the flour and shake off the excess.
- Heat the oil on medium high and brown each meat ball, rotating carefully until they are browned all over.
- Remove the balls from the pan and set aside while you wipe the pan clean.
- Add the tomato juice and chilli powder to the pan and bring to the boil. Reduce to a simmer and replace the meat balls. Cover the pan tightly with the lid and simmer gently for 45 minutes.Â
- Serve 1 meatball per person with a ladle of sauce poured over the top. Great with a side of mashed potato and steamed vegetables or even a serve of my Roasted Cauliflower
