Tabouli is a wonderful, fresh and tasty Middle Eastern salad that as a bonus is jam packed with vitamins. It is the perfect accompaniment to your favourite bbq or with some fresh pita bread and my Bean Skordalia. The trick to achieving an authentic taste is to get the balance of lemon and olive oil just right. After years of taste tests, I believe this recipe to be spot on.

Ingredients
- 1/3 cup coarse bulgar
- 1/3 cup boiling water
- 1 large bunch fresh continental parsley
- 1/2 cup fresh mint
- 1/2 spanish onion finely diced
- 2 tomatoes firm but ripe
- 1/4 cup olive oil
- 1/3 cup lemon juice
- salt
- cracked black pepper

Instructions
- Pour the boiling water onto the bulgur, mix, cover and stand until all the water has been absorbed. Meanwhile finely chop the parsley and mint. Dice the tomatoes leaving behind any juice and seeds that fall away. Combine all the ingredients in a small to medium bowl and season well with salt and pepper. Refrigerate for 30 minutes before serving
