Summer Salsa
Summer Salsa is a feast for the eyes and tastes every bit as good as it looks. It takes only minutes to prepare and is a burst of flavour sitting on a thick piece of toasted sour dough, topped with a poached egg. Or simply serve it as a side to your favourite grilled meat

Instructions
  1. In a bright bowl, add all of your ingredients.
  2. Drizzle with the olive oil. Add a good squeeze of lime, salt and pepper and give a gentle toss.
  3. Top with fine slivers of chilli and a lime wedge on the side to garnish.
Recipe Notes

Although I love chilli dishes that pack a punch, on this occasion, I remove the seeds to avoid overpowering if serving with poached eggs, but itโ€™s totally up to you.
