Using basic spices from your pantry, this spice rub totally transforms the humble chicken thigh adding a smokey, zesty, lightly charred taste . So much flavor packed into the leanest of meat and on the table in just minutes, this recipe is one of my favorites.

Ingredients
- 700 g chicken thighs skinless & boneless
- 1 tbs olive oil
- 1 lemon finely grated zest of
- 1 tbs lemon juice
- salt & cracked pepper
Spice Rub
- 11/2 tsp ground cummin
- 3/4 tsp ground coriander
- 3/4 tsp cinnamon
- 1/4 tsp cayenne pepper

Instructions
- In a small bowl or jar, combine the spice rub ingredients and set aside.
- Spread each chicken fillet onto a large plate and brush both sides with olive oil and the lemon juice.
- sprinkle with salt & cracked pepper.
- Shake the spice mix and lemon zest over both sides of each fillet.
- Heat a barbecue grill or direct heat gas grill to high.
- Add the chicken and grill for approximately 5 minutes on each side (turning only once ) depending on the thickness of the thighs.
- When the chicken is springy to touch and cooked through, remove from the grill and transfer to a serving plate.
- Serve warm with one of pennysmenu salads such as green leaf salad or some corn & black bean salsa.
Recipe Notes
You can make extra spice rub to have on hand in the pantry as it will keep indefinitely.
I recommend cooking the chicken outdoors as there will be smoke (hopefully not fire ๐ย ) ย
