Saganaki is a is a fuss free, fail safe appetizer you can have on the table in just a couple of minutes. You can use a variety of hard Greek cheeses such as Kefalograviera, Graviera, Halloumi or even a pre packaged product found in Supermarkets marketed as Saganaki . A gooey, salty slab of cheese fried golden brown and served with a little lemon or some of pennysmenu cherry mostardo or even a fresh salad as a light meal.

- 1 tbs canola or vegetable oil

Instructions
- Cut the cheese into 1cm slices. Warning ,if you cut the slices thinner than 1cm, the cheese will melt into the pan.
- Heat a heavy based or non stick frying pan to a medium high heat and add the oil.
- When the pan is heated, run each piece of cheese under the cold water tap and then dust in the plain flour. Shake off any excess flour .
- Place the cheese pieces into the heated pan and fry for a couple of minutes until golden brown on each side turning only once.
- Serve immediately.
