Cajun Chicken Wings

If you’re looking for a super easy family meal, don’t let the title of this recipe put you off. I always associate “Cajun” with “spicy”. On the contrary, this is a very child friendly dish because there is zero spice heat. These wings resemble fried chicken as they are golden and crunchy and the beauty of them is that they are cooked in no fat or oil at all. Try them with my mixed leaf and asparagus salad or accompanied with a bowl of salsa for an adult version.

Instructions
  1. Pre-heat the oven to 200°
  2. Mix the flour and spices together in  a medium sized mixing bowl. Coat the wings well with the spice mix and shake off any excess.
  3. Lay the wings onto a wire rack and place the rack onto a baking tray that has been lined with foil. (Warning! If you don’t line the tray, you will spend a long time cleaning it afterwards).
  4. Bake on a high level in the hot oven  for 30 to 35 minutes until cooked and golden brown

Alternatively, you can use chicken thighs with the skin on and bone in for this recipe
